Franchising & scaling

When a strong restaurant concept needs to be repeatable

A restaurant concept is ready for franchising or scaling when it can be delivered consistently by multiple teams, across multiple locations and under real operating conditions. Gastroplan helps turn experience, routines and quality into an operating model that can be repeated — for new openings, relaunches and growing restaurant groups.

What the process can include

From restaurant concept to scalable operations

A franchising or scaling process is built around your current operation, the maturity of the concept and the ambition for future locations. It can include:

Concept and positioning

We clarify the concept identity, target audience, value proposition and market position so new locations can deliver the same guest experience without losing direction.

Menu and product structure

We standardise menus, recipes, portions, product mix and quality levels so the kitchen can deliver consistently across multiple locations.

Kitchen flow and equipment

We work with stations, mise en place, production, equipment and capacity so the operation can perform in different spaces and during busy service.

SOPs, manuals and standards

We turn routines and operational experience into practical procedures, operating manuals and quality standards that teams can use every day.

Onboarding, training and roles

We create a clear model for onboarding, role allocation, training and management so new teams can reach the required standard faster.

Openings and quality assurance

We can support planning, implementation, testing, new-location openings and follow-up so new units start stronger and maintain standards after launch.

We do not only prepare the concept on paper

The focus is on making the solution work in day-to-day operations: during busy service, with new team members, in different spaces and with a consistent guest experience. We work across kitchen, service, purchasing, training and standards as one operational task — not as disconnected documents.

Individual scope

A scaling process tailored to your operating model

Franchising and scaling are always individual projects. Scope is agreed based on number of locations, current operations, concept maturity, timeline, responsibilities and the deliverables that genuinely need to be in place.

Additional locations, formats and openings are agreed specifically as part of the individual scope.

Supplier negotiation and purchasing optimisation usually cover up to five suppliers unless otherwise agreed in writing.

Legal franchise agreements, corporate structure advice and legal counsel are not part of Gastroplan's deliverables.

Process

How we prepare your concept for multiple locations

01

Concept and potential

We clarify the concept, the business goals, the current operation and what needs to be in place before the next location.

02

Operations and standards

We analyse workflow, quality, kitchen flow, roles and bottlenecks to identify what needs to be standardised.

03

Scope and implementation plan

We define deliverables, responsibilities, priorities and a realistic implementation plan for the next phase.

04

Implementation and follow-up

We help turn the plan into operational routines, training and standards that can be applied across locations.

Scale a proven operation, not an untested idea

A restaurant is ready to scale when its economics, menu, quality, workflows, staffing and guest experience can be delivered without constant dependence on the founder. Popularity alone is not proof that the model can be repeated.

We review revenue, contribution, food cost, labour, capacity, investment and sensitivity together with recipes, suppliers, equipment, training, food safety, reporting and quality control. The operating manual is built from real work, tested with staff and updated as new locations reveal practical issues.

A pilot location or controlled test should expose weaknesses in menu, training, suppliers, reporting and opening procedures before a wider rollout. The objective is consistent core quality with clearly defined areas where local adaptation is allowed.
